Porcelain Maintenance and Handling Guide

Consisting of a mixture of quartz, feldspar and kaolin fired at 1400°C, porcelain is the hardest ceramic available. It is not porous, nor does it absorb fats and it is not attacked by acidic liquids. The firing of decorations, including those containing precious metals, allows colors to fuse into the enamel, which protects them in the long term and provides durability.
However, we recommend that you treat your porcelain with care. This practical guide will allow you to keep it for as long as possible.

Receiving the Order

Plan ahead for storage. Set the expectation of how the products should be treated.
► Dish carts: use carts with adjustable dividers to store different forms: round, oval, rectangular or square.
► Use properly fitted cup racks with enough clearance above the top of the cup.
► Do not stack platters over 6’ high. Racks should be easily accessible by all employees regardless of their stature.
► Take care to provide adequate storage for lids and small items.

► Do not store in high traffic areas. Remove the barcode labels before washing. The use of hot soapy water will help remove stubborn residues.


Storage of Porcelain

► When exposed to high humidity, gold and platinum can sometimes become oxidized. In this case, use a non-abrasive cleaner with a soft cloth in order to maintain their shine.

► Stack similar pieces, but avoid overloading. If possible, take care to separate them by a spacer.


Handling Instructions

Gray or black spots may appear on the porcelain. They are caused by contact with metal, whether it be cutlery over time or a stainless steel surface, such as a prep table or shelf. To get rid of these marks, we recommend using a slightly abrasive cleaner formulated for dishes and available commercially. You can also mix baking soda and water together to form a paste and then apply it with a damp sponge. Gently rub the metal deposits and then rinse.


Microwaves

► Any piece of porcelain can be used in a microwave except for those pieces decorated with motifs using gold, platinum, copper, or silver. They would not hold as Bernardaud uses high quality metal.


Dishwasher Tips

Check if there are any recommendations and / or changes to the existing settings of your dishwasher. Some decorations can be damaged by repeated use of strong detergents.

► Observe/respect the prescribed amounts of detergent.
► Do not use scouring pads to clean items with precious metals within the decor.

► Be mindful of how plates and other items are loaded into the dishwasher. Avoid overloading dish racks that can cause items to rub against each other.

► Load similar items together. Make sure that the rack holds items despite the water pressure.

► When the drying cycle is complete, allow the items to cool before unloading them. Heat can temporarily soften metals such as gold or platinum.
► Be careful stacking bowls and cups, especially those with handles.

Proper use during service
► Avoid any drastic temperature shock; do not move the item from the refrigerator to the oven or broiler oven or vice versa. It is recommended that the temperature rise takes place gradually.
► Use pre-shift /lineup to remind the team about proper handling.
► Practice the typical path that a porcelain piece would travel: from the kitchen, to the guest, to the breakdown area, to the dish room, to the storage area.
► Store like items with each other. Separate cutlery, metal service pieces and glassware from porcelain.
► Ensure that there is adequate space in dishwashing area to allow for proper unloading.
► Remove leftover food scraps with a rubber sponge, gloved hand or water spray. Do not scrape a plate with another plate. Do
not scrape a plate with cutlery. Do not use the edge of the table or inside of a rubbish bin to eliminate waste. Do not rub items
together. Do not tap the plates on metal or another hard surface to remove the excess food.
► Rectangular (or square) shaped plates have more of a propensity to break or chip compared to round shapes due to their angles.
► Do not permit “sliding” of dishes on top of each other after they have been cleaned to avoid scratches.
